    又整了一顿high的

    最近上班很绵软,机械地干活,头脑一片空白,胸口如有大石,颈椎腰椎都不爽,简直没有成就感!
    话说今天下午干完活之后突然有了一点做菜的兴趣,脑海中想起一个菜谱,就是以前在珊瑚同学那里看到过的仔姜鸭,联想到最近菜市上大堆大堆的仔姜,于是毅然趁老板在面试某位来应聘的美女之时,溜出公司,奔赴菜市场。
     
    首先要买鸭子,这个是我的心理突破之一。从来没有自己买过鸡鸭这样大件的肉类,况且还有那么大的腥味。但是为了强烈的食欲,豁出去了!在菜店买了半只鸭子,让老板宰好,棕北的物价好高啊,这种杀好洗干净的鸭子要12块一斤,我那半只就花了19块。想起在蒲江我妈买的活鸭子才4块多一斤,心疼。
    然后买仔姜,现在正是仔姜上市的旺季,买了两大板,才1块多,价廉物美。
     
    回到家先处理鸭子,用热水把鸭肉块全部洗一遍,然后把肉剔下来,切成丁,我很受不了鸭子的肥肉和皮子,所以全部剔掉了。
    然后把鸭肉丁用料酒,老干妈辣酱,豆瓣海椒酱,豆粉,码上几分钟。
    同时把仔姜切成丁。
    然后锅里放油,下花椒,下码好的鸭肉丁,炒一会儿把鸭肉的水分炒得差不多了,下仔姜丁。再炒一会儿,放盐,起锅。
     
    四个字:
    色泽鲜亮
    再来四个字:
    香辣可口
    最后四个字:
    下饭极品
    可惜的是,我今天没有煮饭,于是吃得胃里面火辣辣的,但是还是很爽!
     
     
    还可以改进的地方:
    1. 鸭肉丁可以切大点,太小了就埋没在仔姜之中了。
    2. 鸭肉可以考虑先干炒一会儿,起锅。再放油,再炒。这样鸭子的水气更容易炒掉,肉会更干香。

    但是我妈妈爸爸都只炒很短的时间,我也是,把鸭肉弄得肥肥嫩嫩的。
    我知道四川普遍仔姜鸭的做法是把鸭子炒得很干,但我家不喜欢那样。

    珊瑚,可以试下先用水把鸭肉捞一遍,再炒,会去除水腥味,我妈刚才教的。
